The Regulars enjoyed a lemon and rose posset with their meal.
A posset is easy to make anytime. You can add spices and flavorings that suit you best.
The basic recipe is:
2 cups of heavy cream
6 TBS of lemon juice
2/3 cup of sugar
1 tsp – 1 TBS of rosewater
Put cream and sugar in a saucepan, bring to a boil and simmer for ten minutes, stirring constantly. Remove from heat, add lemon juice and rosewater. Stir gently and let rest for twenty minutes or so. Spoon into cups or ramekins, cover with cling film and refrigerate for four hours or overnight. Enjoy!
